The roof sheet metal might as well be paper compared to the rest of the structure...so it isn't the the torsional rigidity of the roof sheet that is what would add to the overall torsional rigidity...but perhaps the tensile strength of the sheet helps keep the pillars it attaches to from displacing as much in the axial direction. I myself need to analyze a simple model to fully grasp the effect. The stitch/seam welding you referred to as spot welding is really unrelated imo as it deals with fine tuning an existing joint.
